Double H: a few things that improve any scratch-made pizza:
. Preheat the oven to very hot. Pizza becomes soggy and tough if you don't have the oven hot enough.
. Let the bases rise properly, stood in a warm place for at least half an hour.
. Put the soggy toppings (raw tomato, tomato paste) straight onto the top surface of the pizza, then the firmer ones (sliced mushrooms, bacon, olives) on top of those, then the stuff that will crisp up (cheeses, pine nuts, almond meal) right on top.
. Keep the layer of toppings thin. That way the base will cook through evenly, and stay crisp.
. Try not to open the oven too much until the pizza is done.

and a trick my Italian friend showed me. Find some ceramic or stone tiles, put them on the oven rack and bake the pizza directly on them. You don't need no stinkin' pans...

Yeah, I have pizza stones, but only two, so if I'm cooking for the multitudes, as I sometimes am, the later pizzas go on metal trays.

I'll be so glad when I can use a proper oven again! The ancient electric one I had died a couple of months ago, and with the fire bans over summer I haven't been able to use the perfectly good oven attached to my woodstove because we're not supposed to run woodstoves in summer in case of sparks. However, yesterday I picked up a decent second-hand electric stove with an oven for a price I can afford. At present it is sitting in the garage waiting to be cleaned. It came out of the kitchen of the local footy club which is being renovated, and of course it was totally filthy. Once I get the layers of grease off, however, it's better than what I had. Now I have to get an electrician to install it.

Ideally, I'd prefer a gas stove, but gas mains don't come out this far, and my husband is a little nervous about bottled gas. I've been cooking oven stuff in a benchtop electric portable oven. The woodstove would be better, but summer fire bans happen. First thing I'll cook in the new oven is pizza! Followed by cheese and hazelnut pastry, yes.

Right! I'm back! And I missed all the April Fool's fun :(

But the handfasting I went to was really good - moving when it was meant to be moving and fun where it was meant to be fun. And it was in a beautiful part of the state.

And it's great to come back to two new pages of SSSS

Oh, and to answer your question Róisín, it was a Scottish/Celtic ceremony with elements from other types of ceremonies mixed in (I asked :) )

Thanks for the tips!

The biggest problem was that I put too much soggy stuff on them so they were undercooked in the middle. Having a pizza stone would probably have helped. I also probably didn't preheat the oven long enough and I have no way to check how hot it is.
Also the sauce wasn't really a sauce, I messed it up so it was actually just poorly crushed soggy tomatoes.

I made some pizzas for dinner tonight. It was my first time making a pizza from scratch and it didn't turn out so great unfortunately. It wasn't bad though, kind of like an ok frozen pizza I think. Well whatever it'll be better next time.
At least I did something I've been wanting to do for some time and that is a small victory for me.

You want the oven very hot for pizza. And if you have a pizza stone, that makes it ever better.

Still....from scatch. That's pretty awesome
